“COVID-19 has really raised the relevance of the issue of our food systems in a way that never could have happened before. Suddenly we start to understand that our supplies chains are disrupted, that the grocery stores aren't necessarily the place to be trusted; perhaps there is convenience, but when the shelves are empty, suddenly you have a different perspective on how important it is to preserve the local landscape. And it's not just conserving the agricultural land, it's trying to find ways to make it economically viable for local farmers. Worldwide, we spent two or three generations breaking down the middle of the food system. All of those pieces are really critical to making these vibrant local food systems—locally and regionally.”
